Compound Butter, who knew?!

Another thing I have taken from my schooling, that made me think about food in another way is Compound Butter also sometimes referred to as Hotel Butter. Simply put, it is butter that is not rock hard (so let it sit out for a bit) mixed with whatever you want or have! Last night I experimented in class with basil and lemon juice. Ideas swirling about the lab were fruits, nuts, other herbs... Why is it pretty brilliant? Well say you cook a piece of protein and don't have much to top it with or spice it up. Slab a bit of butter on there and WAH LAH! Also, for those who are not huge fans of butter (me) what are you to do? I use Earth Balance in my kitchen (just a bunch of oils, but man does it taste like butter), I'm sure it is just as doable. Here are pics from last nights "Ah Ha" moments in lab.
