Kale Chips. Inspired by Eating Well (http://www.eatingwell.com/recipes/kale_chips.html)
Bag of Kale, or any way it came, just washed and stems removed
Olive oil
Salt
Mix the three ingredients in a bowl (see photo above of the dressed greens) and lay on a baking sheet. Spaced so they do not over lap! You may have to bake many batches here. Bake for literally 5-8 minutes (might just be my oven) at 400 degrees and prepare to be AMAZED. I wasn't sure what to expect. However after letting the edges get a little browned (see photos below) what emerged from the oven resembled a potato chip, in its texture and weight. And the first bite?! It crunched and then crumbled in your mouth like a delicious greasy good 'ole fashion Lays potato chip. My audience was amazed. Parents and nannies, you might just be able to fool the kids on this one. Not to mention it took about all of 10 minutes!
