Green Tuna! (avocado as mayo)

I was struck by the idea of mushed up avocado as a replacement for mayo. I don't keep mayo in my fridge, for no apparent reason other than the fact I would not use it (we made fresh mayo in class, that was pretty cool, Chef was right, once you make it fresh you will not go back). My fridge held avocado and celery and red onion. Perfect when paired with a can of tuna?! Here lies a simple, quick, healthy lil lunch. Not vegan-friendly but "those-who-don't-consume-dairy-friendly" (is there a name for that other than lactose intolerant?) Scroll to the last photo I uploaded and see what I did with the tuna salad;)
Green Tuna 
serves: 2
1 can of tuna (I like albacore tuna in water) drained
half stalk celery diced small
red onion diced (a small bunch, fits in your palm, not heaping? however much you want really)
Olive oil (enough to just wet the tuna fish and avocado)
1 half avocado
Salt and pepper TT
Place can of tuna into bowl, and mash in the avocado half. I used a fork and pressed the avocado, smashing it into the tuna chunks. After a couple minutes you should not be able to see chunks of avocado. Add a tablespoon or two of oil, just to wet it. Add celery, onion, salt and pepper. Mix well. Enjoy;)



Ps. Employment is looking somewhat positive! I got a gig personally cooking/catering, so don't count on a post from me tomorrow (I am not forgetting the challenge, I said: cook a new dish each work day whilst unemployed!) I will be baking/cooking/preparing many new dishes for 15 people tomorrow. I will return Friday morning after I deliver it to the event with lots of fun, delicious details. Cheers ya'll!
